Sour Cream Apple Crumb Cake



Yes, it's another apple recipe, but way better than anything I've told you about before.  Forget all of the other apple cobblers, pies, cakes you’ve seen online or baked. THIS is the one you want to make! OMG, this is the best apple dessert I’ve ever tasted. Seriously! It’s so easy, but sooooooo delicious! I mean how bad could it be when the crust is made out of butter and cake mix?? I think that’s a nice start to any recipe. The cake mix and butter blend beautifully to make the best crust ever. Make your grocery list now and add this to your Thanksgiving desserts.....or just make it on a random Saturday afternoon like I did.

 

Someone that I worked with at Delta in the late 90’s brought this dessert to work once and I begged him to ask his wife for the recipe. I have no idea where it has been, but I found it during our move back to Atlanta. I haven’t made this in about 20 years. I think God wanted me to find this recipe so I could make it today and be on a dessert high! David and I were both moaning with delight as we ate this for an afternoon treat. I’m not kidding you, it is so delicious! You need to make this now for a trial run and then again for Thanksgiving. Okay, let’s get down to the details:

 

Ingredients:

 

1 egg

1 package yellow cake mix

1 stick butter

1/4 cup brown sugar, firmly packed

1/2 teaspoon cinnamon

4 apples, peeled and thinly sliced

1 cup sour cream

 

Directions:

 

Peel and slice apples

 

Combine dry cake mix and butter, mix until crumbly. I like to grate the cold butter and then combine with dry ingredients with a pasty cutter. It gets evenly distributed that way.

 


Reserve 2/3 cup of cake mixture for topping. To the 2/3 cup of topping, add brown sugar and cinnamon and combine.

 

Press remaining cake mixture on the bottom of an ungreased 13x9” pan. This will be the most delicious crust you've ever tasted!

 


Spread apples over crust

 


Blend sour cream and egg and spread over apples.

 


Sprinkle reserved topping mixture over apples evenly.

 


Bake at 350 degrees for 25 to 30 minutes

 


Serve it up and enjoy after it’s cooled for a few minutes. Enjoy with some ice cream or whipped cream as well. I’ll take mine straight out of the oven please. You can thank me for this one later!

One Bowl Apple Cake

It’s that time of year and I love it!  Welcome Fall! It’s time to go apple picking, eating apple cider donuts along the way and possibly stumbling upon the best apple fritter you’ve ever tasted. Luckily we actually experienced all of those things a couple of weeks ago and brought home a lot of a few too many apples. I love it though because then I get to make lots of yummy apple treats. I saw this recipe somewhere on Facebook and it reminded me of the Tastefully Simple recipe for Nana’s Apple Cake. That cake is da bomb! I love a quick and easy cake recipe. I especially love it when my husband peels the apples for me. That really makes it worth while! Don’t get jealous, it doesn’t happen all the time but I sure do love it when it does. This is a one bowl cake, the title might have given that away though.

 


Let’s get started on this super simple and moist apple cake! Did I mention you just dump everything in one bowl???



Ingredients:

2 eggs
1 3/4 cups sugar
2 heaping teaspoons cinnamon
1/2 cup oil
6 medium Gala or Fuji or Honey Crisp apples (I used a mixture of several apples I had on hand from our picking trip)
2 cups flour
2 teaspoons baking soda



Directions:

Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil. Peel and slice the apples thinly and add to mixture in bowl (coating as you go to keep apples from turning brown.)

 

Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well until all of the flour is absorbed by the wet ingredients. 




Pour mixture into a greased one 9x13. I used my trusty large, round Pampered Chef stone dish.


Bake for approximately 55 minutes.

Easy & Delicious Berry Cobbler



Who in their right mind doesn't love a cobbler?? Cobbler is one of the best desserts ever created. And you know what's so great about it? You can make any kind of cobbler you want. You can make peach cobbler, apple cobbler, blueberry cobbler.....okay, I think you get my Bubba Gump reference. Just use the basic batter recipe and throw in whatever fruit you'd like. We decided to go with a fruit medley.  This is the best "go to" dessert ever!


I was hanging at my beach house last weekend......okay fine, we don't really have a beach house, but we know people who do. That's all that matters right? So my girlfriend and I decided we wanted to make a cobbler with some left over fruit she had frozen. I immediately went to the Google machine and found a recipe that we altered and made our own. We are happy to share it with you below. We'll call this, Maureen and Dawn's Best Ever Berry Cobbler! I'll share our secrets with you, but don't tell anyone....


Ingredients:


4 Tablespoons butter

3/4 cup All Purpose Flour

3/4 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup milk

2 cups fresh or frozen fruit of your choosing. I used mixed berries with a few peaches thrown in for good measure.

1 Tablespoon sugar

 
I have to apologize in advance, I forgot to take pictures along the way, but I have some lovely shots of the finished product. This recipe is so easy, you won't need step by step photo instructions.


Directions:

First, adjust the oven rack to an  upper middle position. We want to make sure the cobbler gets crispy and delicious. Preheat the oven to 350 degrees. 

Place the butter in an 8 inch square or 9 inch round pan, place in oven to melt in the pan. Once butter has melted, remove pan from oven.

Meanwhile, whisk dry ingredients (minus the 1 T sugar) in a bowl. Add milk and stir until batter is smooth. The batter will be pretty thin.  

Pour batter into dish with melted butter. Then scatter fruit on top of batter, pressing fruit down in the batter. Once finished, sprinkle the 1 T of sugar on the top. 

Bake for about 50-60 minutes, or until top is nicely browned and bubbly.



Some people might say it’s best served warm with a scoop of ice cream on top, but I’m a more of “on the side” kind of girl!  Enjoy this delicious cobbler however you’d like! Below is my preferred method. Yummy!

Apple Dumplings

I was feeling like I needed to try a new dessert today so I got out my new cookbook that the hubby gave me for Christmas, The Pioneer Woman. Love it! Ree and I are such good friends, so I thought I should make something that she recommends. Well many things caught my eye, but I love me some apple pie and this apple dumpling recipe sounded de-licious! I love, love, love apple pie and all things baked with apples. If you are a reader of my blog, you know this about me. I was a little skeptical about one of her ingredients, but she said to use it, so I did. If I can cook with Mountain Dew, then you can too. Yes, you read that right, this apple dumpling recipe has Mountain Dew in it! Sounds crazy I know, but trust me, try this and you will thank me later. I can’t wait for you to try these little heavenly morsels and tell me how much you love them too. They are so delicious! David and I almost finished the whole pan in one night.....just the two of us. Don't judge us! You'll do the same. Okay, I’ll share mine and Ree’s recipe with you:
 
Ingredients:
  • 2 whole Granny Smith Apples, peeled
  • 2 cans (8 Oz. Cans) Crescent Rolls
  • 2 sticks Butter
  • 1-1/2 cup Sugar
  • 1 – 1/2 teaspoon Vanilla
  • Cinnamon, To Taste
  • 1 can (12 Oz.) Mountain Dew Soda (I used 8 ounces, because I was scared to use the whole can)
Directions:
Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. 

Place in a 9 x 13 buttered pan.



Melt butter, then add sugar and barely stir. You want this mixture to be grainy so don't dissolve the sugar. Add vanilla, stir, and pour entire mixture over apples.
 
Now here’s the crazy part.....Pour Mountain Dew around the edges of the pan. Stop shaking your head and just do it! Sprinkle generously with cinnamon. 


Bake at 350 degrees for 40 minutes. You could serve with ice cream, and spoon some of the sweet sauces from the pan over the top, but I'll take mine just straight up. But you might still want to spoon the extra sauce over the top. It is so delicious!

Delicious Dried Apples


Want to learn how to make a tasty and healthy snack? I can teach you how to make stuff that is full of butter and sugar AND I can teach you how to make a yummy and healthy snack. The best of both worlds! My mom used to eat dried apples for a snack back in the early Weight Watcher days. I wasn’t very crazy about her freeze dried packs of them, but they’ve gotten better today. I was browsing on Pinterest the other day and found a recipe for dried apples. Who knew they were so easy to make?? I’ve never thought about making them, but they are super easy. I whipped some up today and have almost eaten them all. I started with just two apples because I wasn’t sure how they were going to turn out. We went apple pickin' and I had some apples left and wanted to put them to good use. You can use any kind of apple. See just how easy they are.....

Ingredients:
2-5 thinly sliced, and cored apples
cinnamon
cooking spray

Directions:
If you have an apple corer, then this will be much easier. I don’t have one so I sliced the apple in half, cut the core out, and sliced the apple on it's side. If you core the apple, you can slice in thin apple rings. You want to make sure you slice the apple thinly.
Line a cookie sheet with parchment paper and lay the apples on the sheet. I like cinnamon on my apples so I sprayed the apples with cooking spray and sprinkled with cinnamon. If you don't add cinnamon, just pop them into the oven just as they are.
Bake at 200 degrees for 2 – 3 hours. Turn apples over after one hour. Check them at 2 hours, if they aren’t crispy yet, cook a bit longer. I cooked mine for about 2.5 hours.
Now you’ve got a delicious and nutritious treat!

Apple Pecan Pie w/Caramel drizzle - so delicious!


I love apple pie! Not just any pie, only Apple pie. Don't be trying to make me eat cherry or lemon or keylime, APPLE is the only pie I like and nothing will ever come between us. If apple pie is listed on a dessert menu, especially apple crumb pie,  I'm getting it! I love the cumbly topping. Yummers! This is my dad's recipe and when I first tasted it, I knew I had died and gone to heaven. It is seriously the best apple pie you will ever taste. I'm not kidding! I have tasted many apple pies and this really is the best one. It has a lot of pecans added and the caramel sauce just puts it over the top. It is so dang delicious. I have some apples at home from a recent apple picking trip and I believe an apple pie is in my future! Are you ready to learn how to make the best apple pie on the planet?? Let's get started:

Filling:
5 sliced and peeled apples
1 tsp vanilla
1 cup chopped pecans
½ cup brown sugar (dark or light – I use light)
4 Tablespoons white sugar
4 ½ tsp ground cinnamon
1 Tablespoons cornstarch
1/3 cup caramel topping
1 deep shell pie crust
3 Tablespoons melted butter

Topping:
¾ cup all purpose flour
¾ cup chopped pecans
¼ cup sugar
6 T butter (melted)
1/3 cup caramel topping

Toss sliced apples with vanilla. In separate bowl combine pecans, sugars, cornstarch and cinnamon; add to apples and toss to coat apples. Drizzle caramel sauce over bottom of pie shell.  Pour in apple mixture. Drizzle with melted butter.

Combine flour, pecans and sugar. Pour in butter until mixture is like coarse crumbs. Sprinkle over filling.

Bake at 350 degrees for about 65 minutes or until  browned. Drizzle with caramel while still hot. Cool on wire rack.

What's better than one pie?? TWO pies!

Bite Size Apple Pies - Delish!

One thing I might love more than blueberries is apple pie! Make them individual size and I am in heaven. You can just pop these little jewels in your mouth one after another. That makes them pretty dangerous in my house! I just made these, but I don’t think I’m going to tell you how many I “sampled” to make sure they were tasty enough to serve. By the way, they WERE tasty enough to serve to my guests.

These were so easy and fun to make and even more fun to eat.....especially when they are hot fresh out of the oven. Yummy! **Caution, filling will be hot.....didn’t want you to sue me for not telling you that before you took a bite. lol**

The first time I made these I didn’t peel the apples, but it made them a little difficult to bite without the apple sliding out. This time I peeled the apples and liked it much better. They weren’t as colorful, but a lot easier to eat, which is the main point, right??

Let’s get down to the details. I know you’ll want to make these and instructions will be very helpful.

Ingredients:
1/2 c. sugar
2 tsp. cinnamon
1 pkg. crescent rolls
3 tbsp. melted butter, divided
2 medium tart apples, each cut into 8 wedges


Directions:

In a small bowl, combine the sugar and cinnamon, set aside 1 Tbsp. On a lightly floured surface, unroll the crescent roll dough. Brush with  2 Tbsp. melted butter, sprinkle with sugar mixture. I worked with half of the package at a time.


Cut each individual crescent section in half so that you’ll have 16 pieces.  Dredge each apple slice in the cinnamon sugar mixture. Then wrap one strip around each apple wedge, placing sugared side of pastry against apple.

 



Place on parchment paper lined baking sheet. Brush tops with melted butter and sprinkle with remaining sugar mixture. Bake at 425 for 13-15 minutes or until pastry is golden brown. Serve warm. Makes 16.


Great served with a scoop of ice cream on the side or some warm caramel sauce drizzled over the top. I've served them both ways and haven't had a complaint yet!
